We are going back to France today, but heading to the Alps this time ! Today we offer you one of the favorite specialties of mountaineers : the Grenoble Walnut Cake.
This recipe, as its name suggests, uses Grenoble walnuts (AOC) as the main ingredients, but you can of course use any walnuts you want, it will be just as good !
It’s an extremely easy and simple recipe, but we will improve here by caramelizing walnuts for decoration, and by making a coffee icing to cover all these wonderful cupcakes.
This is a recipe made for nut lovers ! If you like walnuts, these cakes may become a favorite treat.

For 12 cakes
Cakes :
– 150 g walnut kernels
– 3 eggs
– 100 g of sugar
– 30 g of rum
– 60 g of starch
Caramelized walnuts:
– 12 walnut kernels
– 25 g of water
– 100 g of sugar
– 20 g of glucose syrup
The coffee icing:
– 150g sifted icing sugar
– 1 egg white
– 10 g of coffee extract
