SCHNITZEL GERMAN GOURMET
Ingredients:
4 pcs. Pork Chops or Pork Steaks
Pinch of Salt and Freshly ground pepper
½ Cup all purpose flour
2 Large eggs, slightly beaten
¾ Cup plain breadcrumbs
½ Cup vegetable oil
INSTRUCTIONS:
The first key to achieving perfect Schnitzel is to pound the meat very thin. Place the meat between two sheets of plastic wrap and then pound it using meat tenderizer. The reason this is important is because you will need to fry the meat at high heat for a short period of time to get the perfect crispy crust with out leaving the middle of the meat raw. Lightly sprinkle each side with salt and pepper. Set aside.
Having all the dipping bowls, laid out at the same time so you can move from one to the other quickly. Lay out two plates and shallow bowl: fill with flour and pinch of salt , lightly beaten eggs and plain breadcrumbs. ( not panko )
In a high heat flame put the pan and pour 1/2 cup olive oil, make sure the oil is hot enough- but not to hot, it should be around 330 degrees. Test it with candy thermometer. If it is to hot the crust burn before the meat is done.
Next step, dredge the pork into the flour, coating all sides. Then dip the pork into the egg mixture coating all sides. Then coat the pork with the breadcrumbs, fry immediately the SCHNITZEL , you don’t need to use tons of oil, just enough so that the Schnitzel can swim. Fry the pork 2 to 3 minutes both sides until golden brown.
When it is done removed the Schnitzel from the frying pan and place the briefly on a plate lined with paper towels. Transfer them to a serving plate garnish on the side the apple mushroom sauce. You can have this with french fries, German potato salad, or fresh leafy green salad.

APPLE MUSHROOM SAUCE:

Ingredients:

1 tbsp. olive oil
2 tbsp. unsalted butter
1 clove garlic, minced
1 med. Onion, chopped
Salt and pepper
1 med. Pack mushroom, sliced
½ cup cream
¾ cup sour cream

INSTRUCTIONS:
In a high heat flame stove, put the pan then pour 1 tablespoon olive oil in the pan.
Then add the 2 tablespoon butter.
Turn the stove into medium heat.
Put the garlic, onion mix then cover the pan until the onion will caramelized.
Then put the sliced apple, keep on mixing, then the mushroom.
Add ½ cup cream and sour cream, cover the pan wait around 3 to 4 minutes until the mushrooms are wilted add salt and pepper to taste.

Then add pinc of brown sugar and 1 tsp. parsley chopped, mix thoroughly, done

If you can see in my video, I just bought in the Supermarket some coleslaw and put as garnish with the SCHNITZEL. ENJOY!
