This is the re-creation of a 14th Century waffle from a French “recipe” book. The recipe, like they all were back then, doesn’t give quantities so I followed an interpretation from Ursula’s Historical recipes. These should be stored in the refrigerator and they don’t keep more than a few days. I found putting them in the toaster for a few minutes made then slightly crisper (not a lot) but nice and hot and then ate them with butter spread on top! Definitely an acquired taste but if you like your cheese you’ll like these!
