If you think seeing one wood fired pizza oven is akin to seeing them all, you haven’t met Narsimha yet!
The mud ovens you see in gourmet pizza joints or summer kitchens of farms have a single domed chamber which is heated with firewood or coals and then the pizza is baked in that chamber itself by the slow heat conduction, convection and light radiation. You are limited by needing to stop constantly to reheat the chamber and not having control over temperature ranges.
Not with Narsimha though. He has a separate fire chamber with a primary outlet for initial heating and then secondary outlets to maintain any temperature range desired. He can also keep baking through days without stopping for any breaks, well if you can keep up 🙂
He even has a primary chimney behind the ears and a secondary chimney through the nose. How can anyone not be dazzled by this handsome caring beast who also let’s you sit and rest on his back while cooking…
