Gyros are Greek sandwiches (if you can even call them that) typically made from lamb, beef, or even chicken. Biting into a gyro is an experience like no other. The variety of textures, temperatures, and flavors is unmatched. But why hasn’t anybody ever made a gyro using wagyu beef? My good friend @The Golden Balance and I carefully considered this question and wholeheartedly agreed: we had to give it a try.

Now, you know me pretty well at this point. And this means you probably have a good understanding of my love for rotisserie chickens. The great part about gyros is that the meat is cooked on a vertical rotisserie, so this provided the perfect opportunity for me to get one of those machines. And that’s exactly what we did.

Gyro:
Wagyu beef strips
Paprika
Oregano
Chili powder
Thyme
Cumin
Celery salt
Minced onion
Olive oil
Salt
Pepper

Bread:
2 2/3 cups bread flour
1 tsp salt
10 oz lukewarm water
1.5 packets active dry yeast
2 tbsp olive oil

Tzatziki:
1 medium cucumber (peeled)
2 cups Greek yogurt
1/8 tsp cayenne pepper
1 clove minced garlic
2 tbsp lemon juice
2 tbsp fresh dill
Salt and pepper
Lemon zest

Toppings:
Fries
White onion
Tomato (salted)
Dill
