This cheese is also known as English-style Coulommiers, and is made in a similar fashion to French Coulommiers but is not mold-ripened. A simple cheese to make, it conjures up images of old-fashioned farmhouse kitchens. It is a very versatile cheese that can be enjoyed sliced on a English muffin for breakfast or together with a drizzle of olive oil and a sprinkle of herbs and a few capers for an easy gourmet appetizer.
