Buttery Chateau Potatoes:

5 Yukon gold potatoes
3 tblsp unsalted butter
3 tblsp olive oil
1 rosemary sprig
1 thyme sprig
1 1/2 tsp salt
1 tsp black pepper
2 cloves chopped garlic

Slice potatoes about 1/4 in thick. In large saucepan that is oven safe, heat on med-high and add oil and butter. Once it starts melting, add potatoes, salt, pepper and herbs. You can use 1/2 tsp each of dried thyme and rosemary if you do not have fresh herbs.
Saute and move around until about halfway done and they start to crisp just a little on one side, add garlic. Cook for a minute or two then transfer pan into 350° oven and finish cooking for 15 to 20 minutes.
