Community Shares of Greater Cincinnati presents its virtual cookbook in lieu of its annual Gourmet Grub for Good fundraising event, where member organizations of the federation of social justice, environmental, and animal welfare charities typically cook dishes and guests enjoy a night out voting for their favorites. Due to coronavirus social distancing requirements, this year’s event is this virtual cookbook featuring recipes and demonstration videos from our member charities.

Ratatouille Soup by Planned Parenthood Southwest Ohio Region’s Grants Manager Beth McDaniel

28 ounce can diced tomatoes
One large onion diced
2 garlic cloves minced
2 zucchini diced
1 large eggplant diced
2 red bell peppers diced
Fresh basil chopped
4 C vegetable broth
1/8 t red pepper flakes
2 t Italian seasoning or herbes de provence
Shredded parmesan or Romano for topping
Toss zucchini, eggplant, and peppers with olive oil, salt, and pepper and roast at 450 for 35-40 minutes
Sauté onions, then add garlic, seasonings, tomatoes, broth. Simmer 15 minutes. Add roasted veggies.
Simmer 10-25 minutes.
