In this recipe, I introduce the new style of beef bourguignon using GALBI, the Korean braised beef short ribs, with creamy sweet potato risotto.

Ingredients:
Galbi 350g (Include sauce)
Pinot noir wine 100ml
Thyme 1 pinch
Cherry tomato 5-6
Tomato paste 12g
Parsley for garnish
Ecshallot 4-5
Pancetta 130g
Beef stock 100ml
Left over rice 200g
Sweet potato 250g
Butter 35g
Cheese 15g
Sweet Paprika 1 pinch
Ground Coriander seed 1 pinch
Vege stock 270ml
Spanish onion 50g
Sugar 10g
Garlic 10g
Cream 40ml
Chef’s Tip✍️
Bourguignon is from Bourgogne, in English Burgundy.
Bourgogne is really famous for wine in the world, and produce lots of kind of wine. One of them is Pinot noir red wine.
Traditionally, beef bourguignon is a beef stew braised in red wine from Bourgogne.
If you cannot find Bourgogne one, you still can use Pinot noir instead.
