Tortellini soup, but make it French onion. 🤎
I haven’t seen this mashup before, so I tried a little idea and it turned out SO good. The onions take some patience, but the rest is easy. Save this recipe for your next cozy soup night!
FRENCH ONION TORTELLINI SOUP
Ingredients:
• 5 yellow onions, thinly sliced
• ½ stick butter (4 tbsp)
• ½ tsp salt, plus more to taste
• 3 garlic cloves, minced
• 1 cup dry white wine, like Pinot Grigio, or extra broth
• 12 cups beef broth
• 1 tsp Worcestershire sauce
• ½ tsp dried thyme
• Black pepper, to taste
• Garlic powder, to taste
• Onion powder, to taste
• 1 family-size package refrigerated cheese tortellini
• 1 cup shredded Swiss-Gruyère blend or Gruyère
Instructions:
1. Melt butter in a large pot over medium heat. Add onions and salt. Cook for 35–45 minutes, or until soft and deeply golden, stirring occasionally. Reduce heat if needed and add a splash of water if the bottom starts catching.
2. Add garlic and cook for 1 minute. Pour in the wine and scrape up the browned bits. Simmer for 2–3 minutes.
3. Add beef broth, Worcestershire, thyme, garlic powder, onion powder and pepper. Simmer for 10 minutes.
4. Add tortellini and gently simmer according to the package directions. Taste and adjust seasoning.
5. Place broiler-safe bowls on a baking sheet and fill with soup. Top with cheese and broil until melted and golden, watching closely.
ENJOY! 🤎
