  1. this will make your apartment smell like onion for weeks or months after you make it. you should put a disclaimer on the video

  2. Huh, almost like another more likeable youtuber just made a video about this like a week ago. But i'm sure your reason is "cause its fall season" and not cause someone else just did it right

  3. I made a French onion soup déglacée with some Xérès Vinegar and instead of broiling with cheese. ( I don't have an oven) I make grilled cheese on a sourdough. That's very good

  4. This is typical of americans or american trained chefs trying to make something they don't understand. If you want to learn to make caramelized onions, by all means, watch this although even for that there are better videos out there. But this is not french onion soup, let alone "the best you've ever had". Honestly, I am not even offended by the whiskey and the shiro dashi, have at it. But the stock is an afterthough at best, thank god he did not tell you to get store bought.

The broth for french onion soup is a rich, meaty, meat broth. It has beef, it has veal for the collagen, it has pork shanks and it has capon, which is basically an aged chicken suitable for poaching. This is what you make your stock out of, and this is what makes onion soup trully great. Now, that's a lot of meat. You can make a huge batch, pick the meat, make your soup and just eat the meat with the rest of the broth as a pot au feu, or just go to a french restaurant that respects itself and buy french onion soup. This however, is not it. And I wouldn't mind it if he said that this is a decent approximation for the home cook. But the best onion soup ever….french chefs are turning in their graves.

  5. If you do not have an oven-proof bowl, do not worry. When I was young we would just sprinkle grated cheese over the hot soup in the plate and let it melt, ot is still delicious.

Also we always would rub the toasted bread with garlic.

  6. I could hear a sacré bleu in my head when bourbon was added instead of cognac. I know French people don’t say that but it makes me laugh anyway

  7. French Onion Soup is one of my "go out" foods. I like to go sit at the bar and slurp on the soup and a really good glass of red. So relaxing, especially if it's cold outside. It's SO cozy. This looks like I need it soon 😄

  8. It is interesting that you made this video because recently I watched a queue full of French onion soup videos.

  9. IMO, Pho soup with a strong sweet onion flavor is better. Xu Hue's pho broth in Edmonton, it's owner uses the same recipe from his family restaurant in Vietnam. You could smell the sweet onion just passing by in the same block.

  10. No. I will trust a Frenchman out of loyalty. I don't like your personality 😂

    I reject your 'sachet' 🙄

  11. Bought a Costco bag of onions last week while I needed one. Caramelized them all and today this pops up. Good timing.

  12. Cognac is a good one to use a few tablespoons close to the end just to allow alcohol to cook off makes onion soup taste amazing

  13. I like the croutons cut in bite size pieces then you don't have to cut them with your spoon in the soup bowl which I always find annoying. Also, a splash of brandy towards the end adds some nice flavor. One place I worked in used Munster cheese which is pretty stretchy and tasty.

  14. I'll be honest, I would just eat the onions with a spoon after caramelizing them. Maybe throw a little cheese on top if I'm feeling naughty.

  15. Hey Josh, what if I dont like the chunky onion bits? (Personally, actually fine with them asking for science.) Can I blend this into a smooth soup? Or would that be disgusting?

  16. You had to become another cook that uses Alcohol in your ingredients didn't you. DIDN'T YOU!!!!!! People just can't stay away from the cancer causing substances.
