  1. Ingredients

    Makes 4 burgers

    – 1½ lb ground beef (80/20)
    – 4 brioche burger buns
    – 8 slices Swiss cheese
    – 3 large yellow onions, thinly sliced
    – 2 tablespoons butter
    – 1 tablespoon olive oil
    – 1 teaspoon Worcestershire sauce
    – 1 teaspoon garlic powder
    – Salt and black pepper, to taste
    – 2 tablespoons mayonnaise
    – 1 teaspoon Dijon mustard
    – Neutral oil for the griddle

    Instructions

    1. Heat butter and olive oil in a skillet over medium-low heat. Add sliced onions and cook for 25–35 minutes, stirring regularly, until deeply golden and caramelized. Stir in Worcestershire sauce.
    2. Divide beef into 8 loose balls. Season with salt, pepper, and garlic powder.
    3. Heat a griddle or heavy skillet until very hot. Add a little oil, place beef balls on the surface, and smash each into a thin patty using a sturdy spatula.
    4. Cook until the edges are deeply browned, about 2 minutes. Flip and cook until the beef reaches 160°F. Add Swiss cheese and let it melt.
    5. Toast the brioche buns. Mix mayonnaise and Dijon mustard, then spread onto the buns.
    6. Stack two patties per bun, add a generous portion of caramelized onions, and top with the bun.
    7. Serve immediately while the beef edges are crispy and the cheese is melted.
