🍫 FRENCH CHOCOLATE MOUSSE RECIPE
Ingredients
– 200 g heavy whipping cream
– 400 g dark chocolate (70% cocoa)
– 80 g egg yolks (approximately 3–4)
– 280 g egg whites (approximately 8–9)
– 70 g granulated sugar
Optional Finishing
– Fleur de sel
– Cacao nibs (grué de cacao)
– Toasted buckwheat praline
👨🍳 METHOD
1. Prepare the Chocolate Ganache
Heat 200 g of cream in a saucepan. Remove from the heat and add 400 g of high-quality 70% dark chocolate. Stir until the chocolate melts and forms a smooth ganache.
2. Incorporate the Egg Yolks
Transfer the ganache to a mixing bowl. Add 80 g of egg yolks, whisking until the mixture becomes smooth and homogeneous.
3. Whip the Egg Whites
Slowly whip 280 g of egg whites. Gradually incorporate 70 g of granulated sugar to stabilize the whites. Continue whipping until they become glossy, soft, and form a bird’s beak peak (bec d’oiseau).
4. Fold the Mousse
Using a whisk, incorporate approximately one-fifth of the whipped egg whites into the chocolate mixture to lighten it. Switch to a spatula and gently fold in the remaining egg whites in several additions. Avoid overmixing to preserve the airy structure.
5. Chill and Set
Transfer the chocolate mousse to a serving dish. Refrigerate for at least 2–3 hours until set.
6. Finish and Serve
Chef Stéphanie Le Quellec finishes her mousse with fleur de sel, cacao nibs, and toasted buckwheat praline for additional texture and contrast.
