French onion beef & pasta soup with tender chuck roast, caramelized onions and cheesy bread. This is how I convince everyone to stay for dinner. 😂
I used @maria.stevens1’s French onion pasta soup as my starting point and added chuck roast!
Ingredients:
• Chuck roast
• 4 yellow onions, diced
• 64 oz beef broth, plus extra as needed
• 1 stick unsalted butter
• 2 tbsp Worcestershire sauce
• 2 tbsp all-purpose flour
• Fresh thyme
• 2 bay leaves
• Salt and pepper to taste
• ¼ cup white wine
• 2 cups ditalini or another small pasta
• Sliced bread
• Freshly grated Gruyère
1. Season the chuck roast with salt and pepper. Sear in a little oil until browned on all sides, then set aside.
2. Melt the butter in the pot and add the onions. Cook over medium heat, stirring occasionally, until deeply golden and caramelized, about 45–60 minutes.
3. Add Worcestershire sauce and white wine, scraping up the browned bits. Stir in the flour.
4. Add broth, thyme, bay leaves and the roast. Cover and gently simmer until the beef shreds easily, roughly 3–4 hours depending on its size. Add broth as needed.
5. Shred the beef and discard the bay leaves and thyme stems. Return the beef to the pot, add pasta and simmer until tender, about 8–10 minutes. Taste and adjust seasoning.
6. Top bread with Gruyère and broil until bubbly and golden. Serve with the soup and extra cheese. 🤎
