1.5 kg beef (I used galinette de bœuf, not sure how to translate this)

200 g bacon

1 onion

2 carrots (thicc)

1 celery stalk

250 g mushrooms

Small pearl onions

1 bottle red wine

1 tbsp flour

Bouquet garni

Salt and black pepper

1 small piece of dark chocolate

Hooow it’s made:

Preheat the oven to 150°C (302°F)

Cut the onions and celery into small pieces, and the carrots into thick chunks.

Season the beef with salt and black pepper, heat a large ovenproof pot and brown the bacon then meat in batches until nicely caramelised on all sides. Remove and set aside.

Add the onions, celery, and carrots to the same pot and cook for a few minutes, scraping up the browned bits from the bottom.

Return the beef to the pot, season again, then add the red wine and deglaze the pan. Add the bouquet garni, bring everything to a simmer, then cover and transfer to the oven.

Cook for about 4 hours, or until the beef is very tender.

In a pan, cook the mushrooms and pearl onions with a some butter until soft and caramelised.

After about 3 hours, add the mushrooms, pearl onions, and cooked bacon to the stew.

Reduce the sauce separately over medium-high heat, add a small piece of dark chocolate and stir until melted.

Return everything to the sauce and serve voilà.

  1. the mirepoix thing is very much a theory from overseas, i'm french and as far as im concerned normal people arent even aware about this "rule" lol

  2. Bonjour, ta lumiere est un peut trop neutre/froide. cela rend le plat un peut tern a la camera, se qui est domage car clairement cela dois etre excellent. cela peut se corigger avec une empoule un peut plus chaude, ou en post apres. bonne chance.

  3. Unintentionally made this without a recipe the other day 😅 I had beef stew ingredients, wine that was getting ready to turn to vinegar, and a couple other aromatics laying around.
Made the best damn stew in my life 🤤
Not even joking when I say my bf and I strained the fat out of the liquid, at the end of the pot, and drank half before storing the rest for later recipes requiring a little beefy kick or some dipping sauce for sandwiches. 🤤

Best recipe for a nice fall hug in a bowl.

Best paired with CHEESY mashed potatoes or Pommes Aligot
