FRENCH ONION SHREDDED BEEF
Serves 6 | Prep: 15 minutes
Cook: 8–9 hours on LOW
INGREDIENTS
• 3–3½ lb boneless beef chuck roast
• 2 large yellow onions, thinly sliced
• 3 garlic cloves, minced
• 2 cups prepared Dr. Kellyann French Onion Bone Broth
• 1 Tbsp Worcestershire sauce
• 1 Tbsp balsamic vinegar
• 1 tsp dried thyme
• ½ tsp black pepper
• ½ tsp kosher salt
• 1 Tbsp olive oil
• 2 Tbsp cornstarch
• 2 Tbsp cold water
• Parsley for garnish
• Mashed potatoes for serving

DIRECTIONS
Place onions in your slow cooker. Pat beef dry and season with salt and pepper.Heat olive oil in a skillet. Sear beef about 3 minutes per side, then place over onions. Mix broth, garlic, Worcestershire, balsamic vinegar, and thyme. Pour over beef. Cover and cook on LOW for 8–9 hours, until fork-tender. Remove beef and shred. Mix cornstarch with cold water, then stir into the cooking liquid. Cook on HIGH for 10–15 minutes, until thickened. Return beef and toss in gravy. Serve over mashed potatoes with parsley.
