This is Alain Ducasse’s fondue de tomates — a French technique that takes $15 worth of tomatoes and reduces them into a small amount of incredibly intense tomato sauce.
The tomatoes are blanched, peeled, seeded, seasoned with garlic and thyme, then slowly cooked until every drop of water has evaporated.
The result? Pure, concentrated tomato flavour.

Sorry but in Italy or Spain it will be only 5$ worth of tomatoes, even here in France, at the moment you can buy a 5 kgs crate of super nice tomatoes for 15 €.
