French bread pizza is good — but start with garlic-Parmesan bread and it becomes something else entirely. Crispy buttery bread, bubbling mozzarella and pepperoni with those lovely crisp edges.
We’re taking a French loaf and covering it with homemade garlic-Parmesan butter before giving it a quick toast. That gives us a crisp, flavour-packed base before the pizza sauce even goes on.
Then it’s kept simple: a punchy tomato pizza sauce, plenty of mozzarella, thinly sliced red onion, pepperoni and Parmesan.
Bake it until the cheese is bubbling and browned and the pepperoni starts curling around the edges. Easy ingredients, very little work and a cracking way to turn an ordinary French loaf into dinner.

Ingredients
Garlic-Parmesan Bread
• French baguette/baton — 1 large, about 350–400 g
• Butter, softened — 50 g | 3½ tbsp
• Garlic — 10 g | 2–3 cloves, finely grated
• Parmesan, finely grated — 25 g | about 4 tbsp
• Dried oregano — 1 g | 1 tsp
Quick Pizza Sauce
• Passata — 150 ml | 10 tbsp | about ⅔ US cup | about ½ UK cup
• Tomato purée/paste — 30 g | 2 tbsp
• Olive oil — 15 ml | 1 tbsp
• Garlic powder — 1.5 g | ½ tsp
• Dried oregano — 1 g | 1 tsp
• Sugar — 4 g | 1 tsp
• Salt — 3 g | ½ tsp
• Black pepper — 0.5 g | ¼ tsp
Topping
• Mozzarella, grated — 220 g | about 2¼ US cups | about 1¾ UK cups
• Pepperoni — 100–120 g
• Red onion — 60–70 g | about ½ US cup | about ⅖ UK cup, very thinly sliced
• Parmesan, grated — 20 g | about 3 tbsp | about ⅕ US cup | about ⅙ UK cup
• Fresh basil or parsley – optional

  1. They look so delicious. We used to make these in the 1980's, then my daughters made them at school in the late 90's, early 2000's. We all loved homemade, bread pizzas. Thanks for sharing, Rik.

  2. A much simpler pizza sauce.
    Tomato pureé, herbs of choice, onion powder, garlic powder, salt, black pepper, boiling water to make into a spreadable sauce. 30 seconds.

  3. This looks perfect and I will give it a try. The butter layer makes sense. Pizza is a food group in my house so this will be appreciated.

  4. I used to make these for my son using toast 😅 sometimes buns and he loved the pungency of flavors the commercial pizzas lack. I liked the starter layer you made, Rik. A bit of chesse on top and you have your garlic bread. 🥰 You felt like singing that day. 😅 Well, sing, Rik. Maybe in Italiano since it was Pizza that spread the urge in the air. 😅 Rik, how about you take us outdoors with a favorite barbeque dish?

    You know what's even better? Leftover bolognaise sauce and cheese on garlic bread. I just buy a couple of store bought garlic breads (ones that aren't pre-cut across), cook for a few minutes, top with a little cheese, leftover bolognaise from last night, more cheese and bake under the grill for a few minutes. Sometimes I might chuck some capsicum on or shredded sandwich ham, pepperoni – depends what’s on hand.

  9. Made the pizza tonight and the garlic, cheese butter trick made it come out super crispy with no soggy bread. I wish I’d of known that trick years ago. I don’t have one of those fancy garlic graters, I used a round rock with a semi flat bottom to mash mine. I saw a Mexican lady cook using one so I stoped at the local rock yard and got me one. It’s a kitchen gadget that will last 100 lifetimes. Cheers 😊

Galric butter – really is a secret ingredient for a 'pizza'… Uning the ooni, I make the gough, make the marinara…. and when I have the dough stretched out ready for the toppings, I start with the marinara,.. but always drop on a few blobs of garlic butter on top of the marinara,.. more if the pizza is a garlic chicken pizza. .. but this looks a great quick option
