A dish that represents the pinnacle of French gastronomic artistry

💡 Pro tip: Use the highest quality puff pastry you can find – all-butter makes a world of difference. Also, make sure your fish is completely dry before wrapping; excess moisture will make the pastry soggy. And don’t skip the egg wash – it’s what gives the pastry that beautiful golden glow!

The History Behind Loup en Croûte (Optional – Include in Your Video)
This dish was invented in 1976 by Chef Paul Bocuse, often called the “father of modern French cuisine”. It was created at his legendary three-Michelin-starred restaurant, L’Auberge du Pont de Collonges, near Lyon. Bocuse’s original version was incredibly luxurious – the sea bass was stuffed with a mousse of pike-perch, lobster, and scallops, then wrapped in puff pastry and served with a Choron sauce (a tomato-infused Béarnaise). The dish became an instant classic and has been imitated by chefs worldwide ever since.
