I always had coconut pie as my Birthday CAKE. Momma's was so good. Can't wait to try this one, haven't had one in many years! My baby sister had Peanut butter cake, my brother had coconut cake.

I made a chocolate buttermilk one that's amazing if you like chocolate. I posted it yesterday I'm eating another piece of it now. It's my favorite
We only have desiccated coconut in the UK, very dry. None of the moist American brands.
The only thing I would change is I would have used gram cracker crust

Why not put the coconut into the egg mixture to get a more consistent blend and THEN pour it into the shell?
