Chilled red is the most underrated move in wine, and Fleurie is the best place to start. It’s Gamay grown on pink granite, and thirty minutes in the fridge tightens it up without killing the perfume. But this is not the cheap November stuff — no carbonic maceration at all: twenty-eight days on the skins, then twenty-two months in big old barrels, certified organic and biodynamic. A serious wine that happens to be perfect on a porch in July.
