⭐️Berry Muffins:
1C Honey
4 eggs
1C Greek Yogurt
2tsp vanilla extract
1/4C melted coconut oil
2/3C milk
3 1/2C flour
2tsp baking soda
1/2tsp salt
1C frozen blueberries
1C frozen raspberries
Crumble:
3 tbsp flour
2 tbsp brown sugar
1 tbsp sugar
1 tbsp cold butter
*mix till crumbly
1.Mix dry ingredients
2.mix in wet ingredients
3.fold in berries
4.fill 24 muffins +crumble on top
5.bake 5 min @ 400
6.then 23-25 min @ 350
⭐️Savory Sausage Breakfast Muffins:
1lb cooked and crumbled breakfast sausage (turkey or pork)
6 eggs
1/2-1 cup shredded cheese
1/2 cup milk of choice
1 cup low fat cottage cheese (blended smooth)
1/2 tsp each: pepper, onion powder, garlic powder, parsley
2 cups chopped spinach
1/2 jalapeno, diced
1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1.mix eggs, milk , cottage cheese- whisk
2.folding in remaining ingredients
3.fill 15 muffins
4.bake at 375 for 25 min
5.cool- freeze in a flat layer
6.reheat wrapped in a damp paper towel 30 seconds at a time until desired heat is reached.
⭐️McGriddle Poppers:
2 cups dry pancake mix
1.5 cup milk (or water)
1 cup shredded cheese
1lb cooked breakfast sausage
1/4 maple syrup
*mix Ingredients- fill mini muffin cups – bake at 400° 12-15 min
Pancake dry mix:
2 cups flour of choice
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp sugar
⭐️French Toast:
10 eggs
2 1/2 tbsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
1 tsp pepper
1 loaf texas toast
butter for skillet
1.whisk eggs, vanilla, & seasonings in a deep dish
2.quickly dip & coast each slice of bread in mixture
3.grill on a buttered griddle till each side is golden
4.freeze in a single layer, then store in freezer bag
5.toast in toaster life a waffle to reheat
⭐️ Monkey Muffins:
2 1/2C milk
3 ripe bananas
3 eggs
2 tsp vanilla extract
2C flour
2C rolled oats, blended smooth
1/2C ground flaxmeal
2 tbsp chia seeds
3/4C sugar
3/4C unsweetened coconut flakes
1 1/2 tbps baking powder
1/2 tsp baking soda
1 tsp salt
3/4C mini chocolate chips
1C melted coconut oil *add last
1.mix wet ingredients
2.fold in dry ingredients
3.fill 24 muffin cups
4.bake 7 minutes at 400 degrees
5.bake additional 20-25 min at 350 degrees
⭐️higher protein pancakes:
8 eggs
3C milk
3C flour
1/2C melted butter
1C flax meal
1/2C chia seeds
2 tsp vanilla extract
2 tsp almond extract
1/2 tsp salt
2 tbsp baking powder
*optional 1-2 scoops vanilla protein powder
1.mix batter together, then use a skillet or griddle to cook pancakes
2. cool them on a wire rack and freeze in a single layer, then you can store in a ziploc bag in the freezer.
⭐️ Double Choc Banana Muffin:
4 eggs
8 ripe bananas
2/3C melted butter (or apple sauce)
1/4c sugar
3/4c honey
2 tsp vanilla extract
2 cup flour
1 cup cocoa powder
2 tsp baking soda
2 tsp baking powder
1 tsp sea salt
1/2c ground flaxmeal
1/2 cup dark chocolate chips (or cocoa nibs)
1.mix all wet ingredients
2.fold in dry ingredients
3.fold in chocolate chips
4.fill 24 muffin cups
5.bake at 425 degrees for 5 minutes
6.reduce heat to 350 bake for 12-15 more minutes or until a fork pulls clean
