Ingredients

3 large russet potatoes (about 900 g)
Vegetable or peanut oil, for frying
1 tsp salt, plus more to taste

Directions

1. Wash and peel the potatoes, then cut them into even 1/4-inch thick fries.
2. Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes.
3. Drain the potatoes and dry them thoroughly with clean kitchen towels or paper towels.
4. Heat the frying oil to 325°F (165°C).
5. Fry the potatoes in batches for 3–4 minutes, until softened and pale but not browned.
6. Remove the fries from the oil and let them rest for about 10 minutes.
7. Increase the oil temperature to 375°F (190°C).
8. Fry the potatoes again for 2–3 minutes, until golden brown and crispy.
9. Remove the fries from the oil and immediately season with salt.
10. Serve hot with ketchup or your favorite dipping sauce.
