1. Peel the banana and mash it in a bowl until mostly smooth.
2. Add the eggs, cinnamon, vanilla powder, and sea salt.
3. Whisk until well combined.
4. Heat a non-stick skillet over medium-low heat and lightly grease it with the butter or olive oil.
5. Pour the mixture into the skillet and spread it into an even circle.
6. Cook for 3–4 minutes, until the bottom is golden and the top is mostly set.
7. Carefully flip the omelet with a wide spatula and cook for another 2–3 minutes, until fully cooked through.
