“Give me 5 minutes, one potato, and I will ruin fast food french fries for you forever.” Jason (the dad) and Maddie (the daughter) are making crispy homemade french fries with the double-fry method — soft on the inside, crunchy on the outside, and no heat lamps involved.
QUESTION OF THE DAY: Do you guys like McDonald’s french fries? Put YES or NO in the comments!

WHAT YOU NEED:
• Russet potatoes (skin on — trust us)
• Lawry’s seasoned salt
• Sea salt flakes
• Peanut oil for frying
THE METHOD:
1. Cut your fries, then soak in very cold water for 10 minutes (that murky water is the starch leaving — that’s a good thing)
2. Hand-dry every single fry — water and hot oil are not friends
3. First fry: 325°F for 8–10 minutes, small batches only
4. Second fry: 375°F for 2–3 minutes until golden and crispy
No deep fryer? A big pot or Dutch oven plus an oil thermometer works just fine.
