Ingredients
Yield: 12 individual Kouign-Amann (baked in a standard 12-cup muffin tin)
Dough
• 250 g bread flour
• 5 g instant yeast
• 5 g salt
• 25 g sugar
• 170 g cold water
• 25 g unsalted butter, softened
Lamination
• 200 g unsalted butter (cold but pliable)
Sugar for lamination and shaping
• 180–200 g granulated sugar
Pinni Filling
This makes more pinni mixture than needed, so I suggest making a small batch.
Small Batch Pinni Filling (enough for 12 pastries)
• 50 g edible gum (gond), ground
• 25 g cashews, coarsely ground
• 25 g almonds, coarsely ground
• 25 g pistachios, coarsely ground
• 60 g ghee
• 125 g whole wheat flour
• 90 g icing sugar
• 18 g dry ginger powder
• 8 g cardamom powder
• 25 g raisins, chopped
• 18 g pumpkin seeds
