100% Poulsard from Lias, grey marl, and crushed schist. 60 days of maceration, destemmed using a soldβa type of sieve said to be gentler than other destemming techniques. Minimal sulphur, no fining or filtration. I couldnβt find any information about the use of barrels, but I assume they are used barrels.
Total production of this cuvΓ©e is just 548 bottles and 25 magnums.
π The domaine was established by Eric Fimbel and Lydia Houillon in 2019, with their first vintage released in 2021. Eric comes from the railway industry and is a two-time French fly-fishing champion, while Lydia comes from a winemaking family and is the sister of Adeline (BruyΓ¨re-Houillon) and Emmanuel (Pierre Overnoy). Could they be anything other than making incredible wine and being absolutely wonderful people!? π΅οΈπ΅οΈπ΅οΈ
Eric and Lydia farm 1.6 hectares spread across 12 different parcels, planted with Poulsard, Trousseau, Gamay, Savagnin, and Chardonnay.
There is a very special concentration and energy to this wine. Itβs intensely aromatic, and itβs immediately obvious that whatβs in the glass is a serious quality wine. An explosion of wild garden strawberries, redcurrants, pomegranate, rhubarb, a tea shop, violets, soy sauce, dried herbs, and a touch of acetone that makes the wine feel more ethereal without going over the top. The tannins are slightly firm and grippyβwhich is hardly surprising given the wineβs youthβbut I still found them beautifully integrated. They also provide enough structure to keep the wine from becoming pure glou-glou. Sky-high acidity and an incredibly long finish.
