An orchestra of French gastronomy meets the dappu beats of Telangana. Kakatiya à la Française brought together Chef Michael Swamy and Mugdha Sudhir for an evening where Kakatiya heritage found its way into French technique.
French cheeses, wines, and techniques such as en croûte and en papillote sat beside Guntur chillies, fresh mahua flowers, blooming hibiscus, and Telangana comforts like curd rice and paan daan. Set against Laxman Aelay’s Telangana inspired art, this was a curated dining experience where two culinary cultures shared the same table.
