🍅 Tomato paste — 1 tbsp

🍷 Dry red wine — 1 bottle (750 ml)
💧 Water (or Beef broth for richer flavor) — 3 cups (700 ml)
🧈 Butter — 2 tbsp (30 g)
🫒 Olive oil or Regular vegetable oil — 2-3 tbsp
🌿 Fresh thyme — 2-3 sprigs
🍃 Bay leaves — 3 pcs

Sear the Meat 🥩: Cut the beef into large chunks. Dust them lightly with flour. Heat a mix of oil (olive or regular vegetable oil) and butter in a separate frying pan. Sear the meat until beautifully golden brown on all sides, then remove from the heat and set aside.
Sauté the Veggies 🧅: In a large, heavy-bottomed cooking pot (like a Dutch oven), heat a little more oil. Toss in the large chunks of onion and carrots and sauté them separately from the meat. Next, add the garlic, followed by 1 tbsp of tomato paste and 1 tbsp of flour, cooking and stirring for about a minute.
The Wine Reduction 🍷: Pour the whole bottle of dry red wine into the pot with the veggies. Bring to a boil and let it simmer for 5 minutes to burn off the alcohol and concentrate the flavor.
Slow Cook ⏳: Transfer the seared beef from the pan into the pot. Pour in the water (or broth), and place fresh thyme and bay leaves on top. Season with salt and pepper to taste. Cover with a lid, lower the heat, and simmer gently for 3 hours until the beef becomes melt-in-your-mouth tender.
The Mushrooms 🍄: While the stew is simmering, sauté the mushrooms in a frying pan with a bit of butter until beautifully golden brown. Set aside.
The Final Touch ✨: 30 minutes before the beef is fully cooked, stir in the sautéed mushrooms so they absorb all those rich, savory flavors.
