The Saint-Genix is a golden brioche stuffed with pink pralines, almonds coated in rose-colored sugar that melts into the dough as it bakes. Created around 1880 by pastry chef Pierre Labully in Savoie. The round shape honors Saint Agatha, a 3rd-century martyr, in a legend that reached Savoie when the region ruled Sicily. Wrapped in red and white, the colors of Savoie. Found in bakeries from Chambéry to Chamonix.
