Started managing a new restaurant

And have inherited a 220-bin wine list including some incredible bottles.

I've been seriously in to wine for 17 years and this is the first time I've looked after wines as valuable as this.

Unfortunately the new wine cellar where these are stored is not climate controlled, and I'm not sure how they've been stored historically, but I'll work as quickly as I can to maintain them properly.

Very excited about tailoring the list and training the team on everything properly!
