I think that’s a fantastic idea for people who are adventurous eaters but maybe have some biases against for example certain types/textures of meat ….

I have never seen organs being dry aged, even for a few days, can a brain/ heart really be kept for 10 days without spoiling? Sounds delicious either way! I want the whole menu!

This was me and my girlfriend’s first Michelin star restaurant and it was one of the best meals I’ve ever had. Every other tasting menu we’ve done since hasn’t come close to it.
