I'm considering using "misty grey" from this as I will be removing and re-doing grout:
I could consider buying a more specific color from another provider but I am not sure which colors would make the house look the most premium? Obviously it would be nice to go darker to reduce how much it shows stains, but I also don't want to de-value the look if lighter looks more premium.

That misty grey looks pretty solid choice for your beige tiles. I’ve been looking at lots of high-end property photos lately and the trend definitely seems to be going towards those medium grey grouts – they give that modern look without being too stark
From what I can see in your reference photo, the contrast is nice but not overwhelming. Darker grout will definitely hide stains better which is huge plus for kitchen areas. I think you’re on right track with the misty grey, should give you that premium look you’re going for without making the space feel too busy
most people lean here toward soft grey tones for balance between style and maintenance.
