Today I’m spending a quiet(or not😂) day baking in my tiny Parisian kitchen and making my favorite French dessert — a classic French strawberry tart, using fresh strawberries from the market!
Spring in Paris is the perfect time for simple French pastries, and strawberry tart is my favorites to make and eat!

This video is part of my cozy days baking and cooking in my small Parisian apartment kitchen. I love sharing classic French pastry recipes, quiet moments at home, and my life in Paris through baking.

What’s your favorite French dessert?

Strawberry Tart Recipe

Dough (for 25cm mold)
-120 g flour
-60 g cold butter, cut in small cubes
-15 g almond flour
-35 g icing sugar
-Pinch of salt
-25 g of egg

Rub the flour & butter together till sandy texture. Add the rest of ingredients & mix till combined. Make into a flat disc and cover with film. Place dough in fridge for 30 minutes. Roll dough between 2 sheets of parchment paper with flour. Place dough in tart mold, making sure that dough is pushed downward into corners, so it doesn’t shrink while baking. Cut off edges, prick all over with a fork then put in fridge or freezer for 30 minutes. Bake in a preheated oven at 350F/175C about 15 minutes or until golden brown.

Pastry Cream
-1 egg
-2 egg yolks
-480 grams milk
-Pinch of salt
-1 Tsp vanilla extract or 1/2 vanilla bean
-40 grams cornstarch
-100 grams butter, softened
-70 grams sugar

1.Whisk egg, yolks, sugar, salt, & cornstarch in bowl. Bring milk with vanilla to a simmer in a pan. Whisk the milk into the egg mixture, then add all back to pan.
2.While continuously whisking, cook over medium heat till it thickens and bubbles.
Take off heat, pour through a sieve, then whisk in butter. Pour into crust, smooth out, cover with plastic wrap touching surface of cream, and place in fridge till completely cooled and set about 2 hours.
3.Wash, dry, and slice about 1-1.5ish kilos of strawberries and place on top of crust. Then brush the strawberries with warmed apricot glaze with a bit of water to give the strawberries a shine & to keep the strawberries fresher for longer.

  2. Just as wonderful as a You Tuber with her children playing in the background, your precious Lola with her pitter-patter is a large part of the charm of your content. During my studies in Paris, one of my professors admitted that in France, dogs are considered like children. As an American puppy (2) owner, I believe this with my whole heart. She is the sweetest little girl and we don’t mind her noise. Love watching and seeing Paris again!💖
