I really want to know what plant code was on the Eagle evaporated milk.
Also, the Whole Foods evap was most likely darker because it was organic. It takes a while to get enough organic milk to justify production. It takes visiting several farms to fill a tanker, so it's kinda old milk compared to what's used in the regular.

For the process cheese, swiss chemists used it for Emmental cheese 1911. Kraft started the process in 1916. America as an industrial and logistical focused country utilized this to great effect which is why Kraft American cheese is so well known from exportation especially during World War 2 and Korean War to allied countries. This is why the Korean dish Budae jjigae (army base stew) still uses slices of american cheese as a traditional addition.
