I’ll try everything once. I’ve eaten more than most people have, so meh.
Its not a french thing. People all over the word practice or practiced the „head to tail“ mentality. Its just seen as old fashioned In first world countries. But environmental and ethical reasons lead to this mentality again. Using the whole animal and not just the best bits is traditional and brings back some „forgotten“ delicacies
Avoid due to prions (causing for example "mad cow disease")
I don't eat calv or lamb at all, because I find it absolutely perverted to already slaughter animals at that age.
