Tinned fish has exploded in popularity in recent years and for good reason. It’s nutritious, tasty and cheap as chips. So with the world the way is heading, budget friendly meals are the way forward, so I created this cheap little dish that only costs you around £1 per portion! You swap out the the tinned mackerel for say sardines or other types of tinned fish, it’s up to you.

To make my mackerel rice you will need:
►2 tins of mackerel fillets in tomato sauce (the ones in korma sauce work well too)
►200g of basmati rice
►1 lime
►1 large shallot or 1/2 a red onion
►1 green chilli
►2 cloves of garlic
►A small handful of fresh coriander
►A large knob of butter or butter flavoured spread
►Salt & pepper
►A little oil for frying

  3. No time to read all of the comment, so I don't know if anyone else has mentioned it, but I liked when you offered substitutions and tips about portioning out extras for lunch or freezing. Rice freezes pretty well. Also, you can use the water from washing the rice to water your plants.

  5. If you cut the shallot in half (length-ways) each long half sits firmly flat on the chopping board and can be sliced far more safely that way. No wobblyness. Just a tip.

  6. I'm not a fan of single use kitchen gadgets, but Lidl's rice cooker is 15 quid and so worth it if you cook a lot of rice. Useful tip – their specials usually come back every year.

  8. No, srsly, scrannin' 'em right outta the tin is right. If you've got a bit of time, maybe spread across hot buttered toast… the spicy tomato ones certainly… but right out of the tin is filthygorgeous.

  9. Excellent. Alidi and Lidl are about half the price of Tesco tinned mackerel in tommy sauce. Also, i do my rice in microwave now….perfect everytime and saves energy

  10. I'm getting into that mode lately Adam. Like how to take cheap food (especially a sea protein) and make it s3xual (Bill Clinton speech accent). I've found frozen basa is an underrated fish too if defrosted slowly in the fridge. It gets a lot of hate but 2 large fillets go for about £2.40 in Lidl

Price wise the 💩💩💩 has already hit the fan , last year I could get red diesel for my boat at 87p per liter now it's gone up to £1.28 and I'm sure this is just the start thanks to the orange toddler I can't call what I'd want to call him because YouTube would know doubt have a go at me and probably get your channel in trouble

  13. On the subject of knives, If anyone does want some decent usable knives, but doesn't want to spend a fortune, I can highly recommend Russums or Nisbets, they provide catering products for both the industry and the public.

  14. Made this for lunch the other day although only had mackerel in spring water so drained it and added soy sauce and frozen peas which I had to hand. Was very good actually, thanks for this one Adam.

  15. This is a great idea. I love tinned fish for all the reasons you say. Id add a fresh salad on the side as well. I use the same method for cooking rice so its nice to have that affirmed here!

  16. So glad to see a chef that doesn’t reject produce that’s not in tip top condition out-of-hand. 👍👏 it’s another con on the consumer like the use by and best before dates! Use your nose and taste…..
    I am still working through the cheap veg I bought at Christmas and stuck in the garage because I didn’t want to use freezer space. I kept that for all the cheap meat and fish I got in ‘whoops’ after the holidays. (Best buy, a whole prepared salmon for £13, 10 massive steaks, a ton of bits and a head and tail to make stock! Yay! )
    I took the veg out of the plastic to stop it sweating, transferred to paper bags i nabbed from the supermarket, or wrapped up in newspaper. Some of the veg is a bit sad now, the Brussels and cabbage are a bit limp but still edible. The carrots have patches of black on the surface but peeled are fine. The potato, sweet potato and swede are good, just a bit of growth starting on the tatties. As I use up the meat I’m making batch soup (yep, even with Brussels sprouts – bit of potato, milk and cheese, yum) and refilling the space, as freezers run better full.
