Three years after everything fell apart… real food is getting harder to find.
Stores are empty. Prices are out of control. And most people are relying on whatever they can get their hands on.
But if there’s one thing left worth holding onto—it’s knowing how to cook something real.
In Part 1 of this series, we’re starting simple:
A budget-friendly, flavorful meal that proves you don’t need much to make something worth eating.
Creamy Poblano Chicken over Rice.
It’s cheap, it’s filling, and it actually tastes like real food.
Stay tuned… this is just the beginning.
🛒 Ingredients:
2 large chicken breasts (or 4 small)
3 poblano peppers
1 cup rice (uncooked)
2 cups chicken broth (or water + bouillon)
1/2 onion (diced)
2 cloves garlic (minced)
1 cup heavy cream (or half & half)
1/2 cup shredded cheese (Monterey Jack or Mexican blend)
4 oz cream cheese
1 tbsp oil
Salt & pepper to taste
1/2 tsp chili powder
1/2 tsp cumin
🍳 Instructions:
1. Cook the Rice
Bring 2 cups broth (or water) to a boil
Add rice, reduce heat, cover
Simmer 15–18 minutes
Set aside
2. Prep the Poblanos by roasting them and skinning them
Slice into strips (remove seeds if you want less heat)
3. Cook the Chicken
Season with salt, pepper, and optional spices
Heat oil in a pan
Cook chicken 5–6 minutes per side until done
Remove and set aside
4. Build the Flavor
In the same pan, add onion and cook 2–3 minutes
Add garlic and poblano peppers
Cook until softened
5. Make it Creamy
Pour in heavy cream
add cream cheese
Stir and let simmer 3–5 minutes
Add cheese and stir until melted
6. Bring it Together
Slice or cube chicken
Add back to the pan
Let everything simmer together a few minutes
7. Serve
Spoon over rice
Optional: garnish with cilantro or lime
💡 Notes:
Swap chicken for thighs if cheaper
Use milk + a little butter if you don’t have cream
Add corn or beans to stretch the meal
