Hong Kong Style French Toast
Ingredients:
2-3 slices of milk bread (depending on thickness)
Peanut butter
3 eggs (2 eggs are ok for 1-2 people)
1/3 cup heavy cream
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp Vanilla extract is optional
Oil for frying
Butter
Sweetened condensed milk
Instructions:
Spread a layer of peanut butter on one slice of bread. Place a plain slice on top, then add the final slice with peanut butter, peanut butter side facing down, to form a sandwich.
Trim the crusts from all sides of the bread.
In a bowl, add the eggs, heavy cream, nutmeg, and cinnamon. Whisk until well combined.
Quickly coat all sides of the bread in the egg mixture. Do not soak.
Heat oil to 315 to 320 F. Carefully deep fry the French toast, turning on all sides until golden brown. It will brown quickly, so keep it moving to prevent burning. Transfer to a plate.
Place a knob of butter on top and drizzle generously with sweetened condensed milk.
