I made my own version of a Minnesota Hotdish on the road, in my truck, at a truckstop, in California.
And it turned out really good!

Ingredients:
SPAM (Bacon flavor)
Carrots
Rutabaga
Parsnip
Celery
Peppers (Sweet)
Asparagus
Taters
Peas
Corn
Green beans
Lima beans
Diced green chilis
Onion
Garlic
Rice (Long grain and Wild)
Tomato soup
French fried onions
Tater tots.
Mexican cheese
Parmesan cheese
Marty’s Dash(Salt, pepper, garlic salt, onion salt, season-all)

*Next time I will add mashed taters for thickening, and cook longer.
