Today on Broke Gourmet, we’re making a full dinner: Street Corn Chicken Casserole with Lime Cilantro Rice — big flavor, simple ingredients, and a complete meal the whole family will actually eat.

Real comfort food. No frozen trays required.

Street Corn Chicken Casserole
Ingredients

2 cups cooked, shredded chicken (rotisserie works great)

2 cups frozen or canned corn (drained)

1 can (10 oz) Rotel or diced tomatoes with green chilies (drained)

1/2 cup mayonnaise

1/2 cup sour cream

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp cumin

Salt and pepper to taste

Juice of 1/2 lime

1 1/2 cups shredded cheddar or Mexican blend cheese

1/4 cup chopped cilantro (optional)

Instructions

Preheat oven to 375°F.

In a large bowl, mix:

Chicken

Corn

Rotel

Mayo

Sour cream

Lime juice

Chili powder, garlic powder, cumin

Salt and pepper

Stir in 1 cup of the cheese.

Spread mixture into a 9×13 casserole dish.

Top with remaining cheese.

Bake 25–30 minutes until hot and bubbly.

Garnish with cilantro if desired.

Lime Cilantro Rice
Ingredients

1 cup long grain white rice

2 cups water or chicken broth

Juice of 1 lime

2–3 tbsp chopped cilantro

1 tbsp butter or oil

Salt to taste

Instructions

Bring water (or broth) and rice to a boil.

Cover and simmer 15–18 minutes until tender.

Remove from heat and let sit 5 minutes.

Fluff with a fork.

Stir in butter, lime juice, cilantro, and salt.

Serve

Plate the casserole alongside the lime cilantro rice for a full, budget-friendly dinner.
