INGREDIENTS

Slices of Stale Bread or Brioche
500 g Whole Milk
250 g Double Cream
1 Vanilla Pod
2 Egg Yolks
55 g Sugar
Butter

RECIPE

1- In a saucepan, combine the milk, cream, and vanilla pod cut in half length-ways. Bring to a boil.
2- Remove from heat and let the mixture infuse for 10–15 minutes.
3- In a bowl, beat the egg yolks, then add the milk, cream, and sugar mixture. Allow to cool.
4- Once cooled, pour the mixture into a tray or dish for dipping the bread slices.
5- Soak the bread on both sides.
6- Melt unsalted butter in a pan over low heat. Brown both sides of the bread until the milk-egg mixture has set and the toast is golden.
7- Serve with (optional) berries and a mascarpone mix.
