They weren’t tricking them into thinking it’s an expensive experience that cook ran across town to get them a local pizza spot bc they said they never got to try it while visiting and they were told so , they were giving them an amazing night

Well you took this scene out of context. This was a special request from a couple not from Chicago. The man who brought in the pizza was their waiter and wanted to give them an authentic Chicago style deep dish experience. It wouldn’t have been authentic from this fancy pants kitchen so he went to a mom and pops shop. Brought the pizza to the chef who put his “magic touch” on it and sent it on its way! The scene isn’t about how gourmet restaurants are scammers, it’s about Richie (the waiter) learning how to cater to customers to give them the best experience they can get.

Totally missed this whole point. That made an offhand remark while dining and the staff caught their wish out of the air and made a dream into reality in record time.
