Say hello to my revisited Tartiflette Tart—a crispy, creamy, and melt-in-your-mouth delight that blends traditional French flavours with a modern twist! This recipe features buttery puff pastry, silky custard, and gooey Reblochon cheese, making it the perfect comfort food for any occasion. Whether you’re a beginner or a seasoned cook, this dish is easy to make and guaranteed to impress!

📝 INGREDIENTS (Serves 6)

1 sheet of puff pastry (homemade or store-bought)
400g potatoes (Charlotte variety, parboiled for 5 mins)
200g smoked bacon lardons
1 onion (finely chopped)
2 eggs
100ml single cream
100ml double cream
1 Reblochon AOP cheese (sliced in half horizontally)
Salt, pepper, nutmeg
Butter (for greasing the tin)

👨‍🍳 STEP-BY-STEP RECIPE
1️⃣ Prepare the custard:
In a mixing bowl, whisk the eggs + creams until smooth. Season with salt, pepper, and nutmeg. Set aside in the fridge.
2️⃣ Cook the bacon and onion:
In a dry pan, fry the lardons until crispy. Add the onion and sweat on medium heat until translucent. Drain on kitchen paper to remove excess fat.
3️⃣ Assemble the tart:

Roll out the pastry in a 24cm tart tin, prick the base with a fork.
Layer the parboiled potatoes evenly.
Alternate Reblochon slices with the bacon and onion mix.
Pour the custard over the top and smooth with a spatula.
4️⃣ Bake to perfection:
Bake at 180°C (350°F, fan-assisted if possible) for 25-30 mins.
Pro tip: Broil for 2 mins at the end for a golden, bubbly finish!
Let rest for 5 mins before serving to set the custard.
5️⃣ Serve and enjoy!
Pair with a green salad and watch it disappear! 😋
