I thought I was hosting a Super Bowl party.
For a minute there, it really didn’t look like it was happening.
Instead of panicking, I started cooking — because no matter what, you still have to eat. This is a one-pot chili mac that’s hearty, comforting, and perfect for a small Super Bowl get-together… whether people show up early, late, or right when you’re about to sit down.
No canned chili, no beans, no nonsense — just real chili flavor and mac that actually eats like dinner.
🏈 One-Pot Chili Mac (No Beans)
Serves: 3–4
Time: ~30 minutes
Equipment: Large pot or deep skillet
Ingredients
1 lb ground beef (80/20 works best)
1 medium onion, diced
3 cloves garlic, minced
2 tbsp tomato paste
2 tsp chili powder
1 tsp smoked paprika
¾ tsp ground cumin
¾ tsp black pepper
1½–2 tsp salt, to taste
1 can (15 oz) diced tomatoes (with juice)
2½–3 cups beef broth
2 cups dry elbow macaroni (≈ 8 oz)
2–2½ cups shredded cheddar or cheddar-jack
Hot sauce, to taste
Optional toppings:
Green onions, sour cream, crushed tortilla chips or Fritos
Instructions
Brown the ground beef in a large pot over medium-high heat. Season lightly with salt.
Add the onion and cook until soft. Stir in the garlic and cook 30 seconds.
Add the tomato paste and cook 1–2 minutes until it darkens slightly.
Stir in chili powder, smoked paprika, cumin, and black pepper until fragrant.
Add diced tomatoes and 2½ cups beef broth. Bring to a gentle boil.
Stir in the macaroni, reduce to a simmer, and cook 10–12 minutes, stirring often.
Add more broth if needed.
Turn off the heat and stir in the cheese until melted and glossy.
Taste, adjust seasoning, and add hot sauce if you like.
Serve hot and enjoy — whether kickoff’s early, late, or right on time.
