BEEF DIP SANDWICH
Pulled Beef
• ~½ lb chuck roast
• 2–2½ cups beef broth
• 1 medium onion, sliced
• 3 cloves garlic, minced
• 1 sprig rosemary
• 1 bay leaf
• 1 tbsp tomato paste
• Salt & pepper
• 3 tbsp olive oil
Assembly
• Ciabatta rolls, toasted
• Mayo
• Swiss cheese
• Chimichurri
• Caramelized onions
Steps
1. Sear beef in olive oil until browned.
2. Add onion + garlic, sauté until soft. Stir in tomato paste.
3. Add beef broth, rosemary & bay leaf.
4. Simmer 2–3 hrs until fork-tender (add broth as needed).
5. Shred beef. Strain liquid → reserve as au jus.
6. Toast ciabatta.
7. Assemble: mayo → beef → caramelized onions → Swiss → chimichurri.
