Wonderful recipe as always but in 45C heat the oven should be avoided. Maybe on days like these you should prepare easy recipes to combat the heat. 😃

Well, I didn’t think this recipe was that deadly when I saw how you controlled the amount of cream and butter you put into the rice potatoes. But when you added it, the egg yolk., cream butter, and Parmesan cheese and use it as the topping for each potato, well OMG!! I shouldn’t be surprised how many potatoes you made. A bunch of us had heard about baking potatoes and using a ton of butter with the mashed potatoes., however, I’m amazed that this is the first time many of us have heard or seen this recipe.
We don’t get those Dutch potatoes in Canada, and I’m surprised that you recommended Yukon colds, which are also not that easy to find even though Canadian scientists in Ontario, discovered how to grow growth them. They look like smaller russet potatoes (aka Idaho potatoes) meaning with higher starch. I don’t think our smaller rounder, red or white potatoes would do the job they’ve got very thin skins., their lower starch, and as I said small and round. So I may have to use russet Idaho potatoes.
Oh, yum … almost keto … I so miss potatoes!
