could you do the blanching then freeze them so you always have them ready to finish the frying?
As any Brit will tell you when making roast potatoes – you parboil them until they’re floury and the edges are crumbling. You then drain and toss them in the pan to further break up the edges (gives you crispy bits). These roasties looked way too uptight!

Meh, I think a lot of this is unrealistic for most people. I cook a lot of these things with far less effort. Except the potato salad, that one is about as simple as it gets. Potato rosti looks cool, makes me feel a little silly ill just steam all that stuff in the oven together with an uncovered pan of breaded chicken

I add a little bit of Dijon's mustard to the mashed potatoes. I think that there is one dish missing, "gratin dauphinois"
"adds ton of salt before cooking" -> adds more salt – and more salt. Is it just me or is anyone else happy with less than half that amount of salt? x_x
