50g melted butter — for brushing the moulds
Cocoa powder — for dusting
200g good-quality dark chocolate, chopped into small pieces
200g butter, cut into small pieces
200g castor sugar
4 eggs + 4 egg yolks
200g plain flour
Prep the moulds: Brush 8 ramekins with melted butter, chill, brush again, then dust with cocoa powder.
Melt: Gently melt dark chocolate and butter together over a double boiler until smooth. Let cool slightly.
Whisk: Whisk eggs, yolks, and golden caster sugar until pale and thick.
Combine: Fold the melted chocolate mixture into the egg mixture. Sift in plain flour and fold until just combined.
Fill: Spoon batter into the ramekins (¾ full). Chill for 1 hour.
Bake: Bake at 200°C (180°C fan) for 10–12 minutes until the edges are set but the centre is soft.
Serve: Invert onto plates and serve immediately.
