Frozen fries deserve more respect! The “ketchup lobby” is going to hate me for this, but we’re making a Deluxe Yuzu Truffle Aioli to upgrade these crispy shoestring fries.
We’re mixing Kewpie mayo with parsley, cheap black truffles, garlic, and a splash of that amazing Japanese yuzu juice for a super fancy dipping sauce. Pile on the Pecorino Romano cheese (you have to tell me when to stop!) and you’ve got a gourmet snack at home on the cheap.
Ingredients
For the Fries:
* 1 bag of Frozen Shoestring Fries
* Pecorino Romano cheese (for grating)
For the Yuzu Truffle Aioli:
* 1/4 cup Kewpie Mayonnaise
* 1 tbsp Fresh Parsley, finely chopped
* 1 tbsp Jarred Black Truffles (Carpaccio), finely minced
* 1/2 cloveGarlic, minced or pasted
* 1 tsp Japanese Yuzu Juice (or lemon juice in a pinch)
Instructions
* Bake the Fries: Cook the frozen shoestring fries according to the package directions until they are golden brown and crispy. (extra cripy even better)
* Make the Aioli: While the fries are baking, finely chop the parsley and black truffles, and mince crush the garlic.
* Get Saucy: In a small bowl, combine the Kewpie mayo, chopped parsley, minced truffles, garlic, and yuzu juice. Mix with a “circular motion” until everything is well combined.
* Assemble: Pour the hot, crispy fries onto a serving plate.
* Make it Rain Cheese: Generously grate Pecorino Romano cheese all over the hot fries (until somebody says “when” its enough).
* Serve: Serve immediately with your homemade yuzu truffle aioli for dipping.
